There are countless mountain huts and shelters offering excellent food and overnight stays, some facilities are also open in the summer, the trail network is taken care of and signaled, special routes for mountain bikes are created. The typical Ampezzan cuisine is also called a border cuisine as its gastronomy has strong links with Tyrolean and Western Austrian cuisine. Pasta is the undisputed protagonist of the Ampezzo cuisine but the fruits of the undergrowth also play a fundamental role in those used for the preparation of desserts, ice cream and especially jams that accompany local cheeses and game dishes.

Typical dishes


The Chenedi are balls of stuffed breadcrumbs and are the Ampezzo version of Tyrolean dumplings (Tyrolean knödel). Chenedi are absolutely the main dish of the Ampezzo cuisine and are filled with speck, cheese, lard and spinach and are served with melted butter or hot broth.


Another type of pasta typical of the Ampezzo cuisine are the Casunziei which in fact are crescent-shaped ravioli. Casunziei are stuffed with red turnip or potato which are flavored with melted butter and poppy seeds.


Pastin is a popular dish and is loved by locals and we recommend you to taste it before leaving Cortina. Pastin is a kind of meatloaf that is obtained from the mixture of freshly made and not seasoned salami which is cooked on the plate or on the grill.

From the Venetian tradition, however, Cortina inherited polenta and rise and bise (also known as rice and peas), flanked by bean soup (also called faariesa) or barley; Goulasch süppe, a specialty from Hungary, consisting of a paprika spiced meat soup. The pestariei are also very good, they are small pieces of white flour pasta that are cooked in boiling and salted milk and in the past were eaten for breakfast.

As for the main dishes of the Ampezzo cuisine we recommend you eat:

Game stew with cranberry jam.
Austrian Grostl (pork with boiled potatoes).
Roast with mushrooms
Rack of pork ribs

Traditional sausages such as speck, suppressed, ossocolli and various salamis are accompanied by delicious mountain cheeses and cow cheeses (generally they are not very mature) such as renaz, contrin, zumelle, fodom, schiz, zigher and tosela which in turn are accompanied by jams of the fruits of the undergrowth. As far as the side dishes are concerned, you should definitely try the fantastic Ampezzano potatoes which are cut into cubes and boiled and then sautéed in a pan with onion and speck.

Nighele or donuts without filling
Various cakes with cottage cheese
Undergrowth fruit pies

Typical wines

Traditions also mix with regards to wines, in fact Veneto is presented with prosecco while the South Tyrolean shore with excellent wines such as Il Sylvaner, Riesling, Lagrein, Kerner, Muller-Thurgau and the inevitable Gewurtztraminer.
