The Finns have a decidedly Nordic culinary tradition and a way of conceiving the table and commensality in a particular way. Local products, km 0 and always fresh, are favorite: meat, fish, potatoes, vegetables, wild berries, rye bread, beer and coffee. Discovering and knowing a place also means trying the local cuisine.
Literally “Karelian tart”, as it originates from the historical region of Karelia, this typical oval or round savory pie is now recognized by the EU as a traditional guaranteed specialty. Apart from the thin and crispy sheet of rye flour, the filling sees barley, rice or mashed potatoes, cooked in milk and mixed with butter and boiled eggs.
Beloved by the Finns and ideal snacks during walks in the woods, they are giant sausages cooked by the flame, served alone or in a sandwich, stuffed with mustard and accompanied by a refreshing beer, perhaps a Lapin Kulta or a Happy Joe.
Generally produced with cow’s milk, sometimes with reindeer or goat, and then fried or baked in the oven, this traditional “cheese pan” is served in slices or cubes and accompanied with jam or berries: blueberries, strawberries or camemoro.
Various are the meats consumed by the Finns (beef, pork, lamb, bear, elk and game in general) but the most loved, tasty and typical is undoubtedly reindeer meat. According to recent studies, it is one of the healthiest in the world, rich in vitamin B-12, omega-3, omega-6 and low in fat.
In this national specialty it is served stewed with mashed potatoes, ubiquitous in Nordic cuisine, and wild berries but it is also found in fillets, smoked, marinated with sauces or accompanied with fresh herbs.
Institution of Finnish cuisine, it is rye bread prepared with natural yeast. Fragrant and tasty, suitable to accompany all dishes, it has many variations, the best known being the reikäleipa, or “bread with the hole”, with a donut shape, firm and crushed.
The näkkileipä instead is its crunchy and subtle version, a sort of cracker.
Delicious specialty of the many types of sweet bread (pulla), this Nordic brioche is softer than its Swedish and Norwegian counterparts. Covered with a thin layer of butter, sugar and cinnamon, it is often combined with a cup of coffee (not our espresso but long, of course), of which Finns are the largest consumers in all of Europe.
Typical and particularly appreciated by children, it is a cold porridge prepared with semolina and red fruits and served with a glass of milk.
Icon of Finnish cuisine and awarded by the EU with the Traditional Specialty Guaranteed mark, it is a fresh fish pie (whitefish, pike, perch, gardon, smelt, salmon, herring), arranged in layers, covered with bacon or bacon and enclosed in a wrapper of rye bread similar to a meatloaf.
Considered a unique and handy dish due to its “edible food box”, it is ideal as a packed lunch.
